Ingredients

Step-by-Step Instructions
- Cook chicken thighs in a pot with water to cover. Simmer for 15 minutes until cooked through. Shred or dice.
- Cook brown rice separately according to package directions.
- Lightly steam kale for 3 minutes. If using frozen blueberries, thaw them; if fresh, rinse well.
