Ingredients
- 1 lb boneless, skinless salmon fillet, cut into chunks
- 1 lb lean ground turkey (93% lean)
- 2 cups low-sodium bone broth (chicken or beef, no onion/garlic)
- 1 cup sweet potato, peeled and diced small
- 1 cup green beans, trimmed and chopped
- 1/2 cup carrots, finely diced
- 1/2 cup brown rice, uncooked
- 2 tbsp ground flaxseed
- 1 tbsp coconut oil
- 1 tsp ground turmeric
- 1/2 tsp ground ginger
- 1/4 cup fresh parsley, chopped
- 1/2 cup blueberries
Step-by-Step Instructions
- In a large pot, heat coconut oil over medium heat. Add ground turkey and cook, breaking apart, until no longer pink, about 6-8 minutes.
- Add bone broth, sweet potato, carrots, and brown rice. Stir to combine and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
- Add salmon chunks, green beans, turmeric, and ginger. Cover and simmer for another 10-12 minutes until fish flakes easily and vegetables are tender.
