Ingredients

  • 1 lb lean ground beef (85/15 or leaner)
  • 2 medium sweet potatoes, diced
  • 1 cup chopped spinach
  • 1 tbsp coconut oil
  • 1/2 tsp calcium carbonate
  • 200 IU vitamin E
  • 500 mg fish oil (EPA/DHA)

Step-by-Step Instructions

  1. Brown the ground beef in a large pot over medium heat, breaking it apart as it cooks. Drain excess fat.
  2. Add diced sweet potatoes and enough water to cover (about 2 cups). Bring to a boil.
  3. Reduce heat, cover, and simmer for 25 minutes until sweet potatoes are fork-tender.
  4. Stir in chopped spinach and cook for 3 more minutes until wilted.
  5. Remove from heat. Stir in coconut oil, calcium carbonate, vitamin E, and fish oil.
  6. Let cool completely. Portion into daily servings. Refrigerate up to 5 days or freeze up to 3 months.
