Ingredients

- 2 medium sweet potatoes, diced

Step-by-Step Instructions
- Brown the ground beef in a large pot over medium heat, breaking it apart as it cooks. Drain excess fat.
- Add diced sweet potatoes and enough water to cover (about 2 cups). Bring to a boil.
- Reduce heat, cover, and simmer for 25 minutes until sweet potatoes are fork-tender.
- Stir in chopped spinach and cook for 3 more minutes until wilted.
