Ingredients

  • 1 lb whitefish fillet (cod, haddock, or pollock)
  • 2 medium sweet potatoes, diced
  • 1 cup chopped kale
  • 1 tbsp olive oil
  • 1/2 tsp calcium carbonate
  • 200 IU vitamin E

Step-by-Step Instructions

  1. Bake or poach whitefish at 375°F for 15 minutes until it flakes easily. Let cool, then flake and check for bones.
  2. While fish cooks, boil or steam diced sweet potatoes for 15 minutes until tender. Mash lightly.
  3. Lightly steam kale for 3 minutes until wilted.
  4. Combine flaked fish, mashed sweet potatoes, and kale.
  5. Add olive oil, calcium carbonate, and vitamin E. Mix gently.
  6. Cool completely. Refrigerate up to 3 days (fish spoils faster) or freeze up to 2 months.
