Ingredients
- 1 lb (454g) ground turkey, 93% lean
- 1 cup (180g) uncooked quinoa
- 2 cups (480ml) low-sodium chicken or vegetable broth
- 1 cup (120g) chopped green beans, steamed
- 1/2 cup (60g) grated carrots
- 1 tbsp (15ml) olive oil
- 1/2 cup (60g) chopped spinach, steamed and drained
Step-by-Step Instructions
- Rinse the quinoa under cold water to remove bitterness.
- In a medium saucepan, combine quinoa and broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
- While quinoa cooks, heat olive oil in a large skillet over medium heat. Add ground turkey and cook until fully browned, breaking it into small pieces.
- Add steamed green beans, grated carrots, and spinach to the skillet. Cook for 3–4 minutes until vegetables are tender.
- Once quinoa is done, fluff with a fork and mix into the turkey and vegetable mixture.
- Allow to cool completely before serving.
