Ingredients

  • 1 lb chicken breast, diced
  • 4 chicken feet (raw, cleaned)
  • 1/2 cup brown rice
  • 1 cup sweet potato, cubed

Step-by-Step Instructions

  1. Rinse brown rice and set aside in a bowl.
  2. In a large pot, combine chicken broth, rice, and chicken feet. Bring to a boil, then reduce heat and simmer for 30 minutes until chicken feet cartilage is soft.
  3. Remove chicken feet, pick off softened cartilage and skin, and return meat to the pot. Discard bones.
