Senior Joint Support Stew
Ingredients
- 2 lbs beef stew meat (grass-fed, cut into 1-inch cubes)
- 1 lb chicken thighs (boneless, skinless, diced)
- 1 cup brown rice (uncooked)
- 2 medium sweet potatoes (peeled, cubed)
- 1 cup green beans (chopped)
- 1 cup butternut squash (peeled, cubed)
- 4 cups low-sodium bone broth (homemade or store-bought)
- 2 tbsp wild-caught salmon oil
- 1 tbsp ground turmeric root (or 1 tsp turmeric powder)
- 1 tbsp ground ginger root
- 1 tbsp ground cinnamon
- 2 whole eggs (pasture-raised)
- 1 cup spinach (chopped)
- 1/4 cup blueberries (fresh or frozen)
- 2 tbsp ground flaxseed
- 2 cups water (for cooking)
- 1 tbsp coconut oil (for initial sauté)
Step-by-Step Instructions
- Heat coconut oil in a large heavy-bottomed pot over medium heat. Brown the beef cubes for 3-4 minutes per side, working in batches to avoid overcrowding, then set aside on a plate.
- In the same pot, add diced chicken thighs and cook for 3-4 minutes until lightly browned on the exterior (they will finish cooking in the stew).
- Add bone broth and water to the pot, scraping up any browned bits from the bottom. Return beef and chicken to the pot.
- Add brown rice, sweet potatoes, butternut squash, turmeric, ginger, and cinnamon. Stir to combine and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 45-50 minutes until rice is tender and vegetables are soft, stirring occasionally to prevent sticking.
- Add green beans and spinach in the last 10 minutes of cooking to preserve nutrients. Stir gently.
- Remove from heat. Let cool for 15 minutes, then stir in beaten eggs (temper by slowly adding a ladle of hot liquid to eggs first to prevent scrambling).
- Once cooled to room temperature (below 100°F), fold in salmon oil, ground flaxseed, and blueberries. The oil's heat-sensitive omega-3s are preserved by adding at the end.
- Portion into airtight containers. Refrigerate portions for up to 4 days or freeze for up to 3 months. Thaw frozen portions overnight in the refrigerator before serving.
- Warm refrigerated portions gently to room temperature or slightly above (never microwave) before feeding to enhance palatability for senior dogs.
