Ingredients
- 1 lb 93% lean ground turkey
- 1 cup dry quinoa
- 1 cup chopped green beans
- 1 cup diced carrots
- 1/2 cup canned pumpkin (pure, not pie filling)
- 2 tbsp ground flaxseed
- 1 tbsp fish oil (EPA/DHA source)
- 4 cups water (for quinoa cooking)
Step-by-Step Instructions
- Rinse quinoa thoroughly under cold water in a fine mesh strainer
- Bring 4 cups water to boil in a medium pot, add quinoa, reduce heat, cover and simmer 15 minutes until fluffy
- In a large skillet over medium heat, cook ground turkey breaking into small pieces until no pink remains, about 8-10 minutes
- Steam or microwave green beans and carrots until fork-tender, roughly chop into bite-sized pieces
- Combine cooked quinoa, turkey, vegetables, and pumpkin in a large bowl
- Fold in ground flaxseed and drizzle fish oil over mixture, stir until evenly distributed
- Allow to cool completely to room temperature before serving or portioning
