Ingredients
- 1 lb ground turkey (93% lean)
- 1 cup dry quinoa
- 2 cups low-sodium chicken broth (or water)
- 1 cup chopped green beans
- 1 medium carrot, diced
- 1/2 cup pumpkin puree (plain, not pie filling)
- 2 tbsp olive oil
- 1 tsp dried parsley
Step-by-Step Instructions
- Rinse quinoa thoroughly under cold water and drain.
- In a medium pot, bring chicken broth to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork and set aside.
- In a large skillet over medium heat, cook ground turkey breaking it into crumbles until no pink remains, about 8-10 minutes. Drain any excess fat.
- Add diced carrot and chopped green beans to the skillet with the turkey. Cook for 5 minutes until vegetables are tender-crisp.
- Stir in cooked quinoa, pumpkin puree, olive oil, and dried parsley. Mix thoroughly and cook for 2 more minutes until heated through.
- Remove from heat and allow to cool completely to room temperature before serving.
- Portion into individual servings and store as directed below.
