Ingredients

  • 1.5 lbs boneless, skinless salmon fillet
  • 2 cups sweet potato, peeled and diced
  • 1 cup green beans, chopped
  • 1/2 cup carrots, diced
  • 1/4 cup fresh spinach, chopped
  • 2 tablespoons sardines (canned in water, drained)
  • 2 tablespoons ground flaxseed
  • 1 tablespoon hempseed oil
  • 1/2 cup water or low-sodium fish stock

Step-by-Step Instructions

  1. Preheat oven to 375°F (190°C). Place salmon fillet on a lined baking sheet and bake for 20-25 minutes until internal temperature reaches 145°F (63°C). Allow to cool, then flake into bite-sized pieces.
  2. While salmon bakes, steam sweet potatoes for 15-20 minutes until fork-tender. Steam green beans and carrots separately for 8-10 minutes until soft but not mushy.
