Ingredients

  • 2 lbs boneless, skinless salmon fillets
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup brown rice
  • 1/2 cup green beans, chopped
  • 1/2 cup carrots, diced
  • 2 tbsp olive oil
  • 4 cups water
  • 1/2 cup fresh blueberries
  • 1/4 cup fresh parsley, chopped

Step-by-Step Instructions

  1. Rinse the brown rice thoroughly under cold water and set aside.
  2. In a large pot, bring 4 cups of water to a boil and add the brown rice. Reduce heat and simmer for 15 minutes.
  3. Add the cubed sweet potatoes to the pot and continue cooking for 15 minutes until tender.
  4. Steam the salmon fillets separately for 10-12 minutes until flaky and cooked through to an internal temperature of 145°F.
  5. Add the chopped green beans and carrots to the rice mixture and cook for an additional 5 minutes.
  6. Flake the cooked salmon into bite-sized pieces and combine with the rice and vegetable mixture.
  7. Stir in olive oil, blueberries, and fresh parsley. Allow to cool completely before serving.
