Ingredients
- 1.5 lbs boneless, skinless salmon fillet
- 2 cups sweet potato, peeled and diced
- 1 cup brown rice, uncooked
- 1 cup green beans, chopped
- 1/2 cup carrots, diced
- 2 tbsp olive oil
- 4 cups water
Step-by-Step Instructions
- Rinse the brown rice and add it to a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 25 minutes until tender.
- While the rice cooks, peel and dice the sweet potatoes into 1/2-inch cubes. Steam or boil for 15 minutes until fork-tender.
