Ingredients

  • 1.5 lbs boneless skinless salmon fillet
  • 2 medium sweet potatoes (about 1.5 lbs), peeled and cubed
  • 1 cup brown rice
  • 1 cup chopped green beans
  • 1/2 cup frozen peas
  • 2 tablespoons ground flaxseed
  • 1 tablespoon olive oil
  • 4 cups water

Step-by-Step Instructions

  1. Rinse brown rice and add to a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer covered for 35-40 minutes until tender.
  2. While rice cooks, steam or boil sweet potato cubes until fork-tender, about 15 minutes. Drain and set aside.
  3. Poach salmon in a separate pan with enough water to cover, cooking for 12-15 minutes until it flakes easily with a fork. Remove any bones if present and flake into bite-sized pieces.
  4. Steam green beans and peas for 5-6 minutes until soft but still bright in color.
  5. In a large mixing bowl, combine cooked rice, flaked salmon, mashed sweet potato, green beans, and peas.
  6. Fold in ground flaxseed and olive oil until evenly distributed.
  7. Allow to cool completely to room temperature before serving or storing.
