Salmon & Sweet Potato Feast
Ingredients
- 1 lb boneless, skinless Atlantic salmon fillet
- 2 medium sweet potatoes (about 1.5 lbs total), peeled and cubed
- 1 cup green beans, trimmed and chopped
- 1 cup spinach, roughly chopped
- 2 tbsp sardines canned in water (drained), finely minced
- 1 tbsp ground flaxseed
- 2 tsp hempseed oil
- 1/2 cup low-sodium chicken or vegetable broth
- 1/4 cup cooked quinoa
- 1 large egg, lightly beaten
Step-by-Step Instructions
- Preheat oven to 375°F (190°C). Season the salmon fillet lightly with a pinch of salt (optional) and place on a parchment-lined baking sheet. Bake for 15-20 minutes until the internal temperature reaches 145°F (63°C). Let cool, then flake into bite-sized pieces, removing any bones.
