Ingredients
- 2 lbs ground turkey (93% lean)
- 1 cup brown rice (dry measure)
- 1 cup chopped carrots
- 1 cup chopped green beans
- 1 cup chopped spinach
- 2 tbsp ground flaxseed
- 2 tbsp olive oil
- 4 eggs (with shells, finely ground)
- 1 can (15 oz) pumpkin puree (plain)
- 2 cups low-sodium chicken broth
- 1/2 cup chopped blueberries
Step-by-Step Instructions
- Cook brown rice according to package directions using chicken broth instead of water; set aside to cool
- In a large pot, brown the ground turkey over medium heat, breaking it into small pieces; drain excess fat and set aside
- In the same pot, steam carrots and green beans for 5-7 minutes until tender; add spinach for the last 2 minutes until wilted
- Grind cleaned eggshells into a fine powder using a coffee grinder or mortar and pestle
- In a large mixing bowl, combine cooked turkey, rice, steamed vegetables, and ground eggshell powder
- Add ground flaxseed, olive oil, pumpkin puree, and finely crushed eggs; mix thoroughly
- Fold in blueberries gently to avoid crushing
- Let cool completely before portioning into daily servings
- Store in airtight containers in refrigerator for up to 5 days, or freeze individual portions for up to 3 months
