Ingredients
- 1 lb ground turkey (85% lean)
- 1/2 cup brown rice (uncooked)
- 1/2 cup rolled oats (uncooked)
- 1 large sweet potato, peeled and diced
- 1 cup chopped green beans
- 1/2 cup grated carrots
- 2 tablespoons ground flaxseed
- 1 tablespoon olive oil
- 1/2 cup low-sodium chicken broth
- 1/4 teaspoon iodized salt
Step-by-Step Instructions
- Bring 1 cup of water to a boil in a medium pot, add brown rice and rolled oats, reduce heat to low, cover, and simmer for 20 minutes until tender and water is absorbed.
- While grains cook, brown the ground turkey in a large skillet over medium-high heat, breaking it into crumbles, cooking until no pink remains, about 8-10 minutes.
- Add diced sweet potato to the skillet with the turkey, pour in chicken broth, cover, and simmer for 10 minutes until sweet potato is fork-tender.
- Stir in chopped green beans and grated carrots, cook uncovered for 5 more minutes until vegetables are soft and liquid is mostly evaporated.
- Remove from heat, fold in the cooked rice and oat mixture, then stir in ground flaxseed and olive oil until evenly distributed.
- Sprinkle iodized salt over the mixture and stir thoroughly to combine.
- Allow to cool completely to room temperature before serving or storing.
