Ingredients
- 1 lb ground chicken (93% lean)
- 1 cup brown rice (dry measure)
- 1/2 cup chicken liver
- 1/2 cup green beans (chopped)
- 1/2 cup carrots (diced)
- 2 tbsp sardines (canned in water, drained)
- 1 tbsp olive oil
- 1/4 cup whole milk yogurt
- 1/2 cup spinach (chopped)
- 1/4 cup blueberries
- 2 eggs (including crushed shells for calcium)
Step-by-Step Instructions
- Cook brown rice according to package directions, using low-sodium chicken broth instead of water for added flavor
- Steam or boil green beans and carrots until tender, then mash lightly
- Brown ground chicken in a large pot over medium heat, breaking into small pieces
- Add chopped chicken liver to the pot and cook for 3-4 minutes until cooked through
- Stir in cooked rice, steamed vegetables, and drained sardines
- Remove from heat and let cool to lukewarm temperature
- Fold in olive oil, yogurt, spinach, and blueberries
- Crush cleaned eggshells into a fine powder and mix thoroughly into the food
