Ingredients

  • 1 lb ground turkey (93% lean)
  • 1 cup brown rice (uncooked)
  • 1 cup chopped carrots
  • 1 cup chopped green beans
  • 1/2 cup peas
  • 2 tbsp ground eggshell (or 1 tsp calcium carbonate)
  • 1 tbsp fish oil (salmon or sardine)
  • 1/4 cup plain pumpkin puree
  • 1/2 cup chopped spinach
  • 1 tbsp olive oil
  • 1/4 cup water or low-sodium chicken broth

Step-by-Step Instructions

  1. Cook brown rice according to package directions using water or low-sodium chicken broth
  2. In a large skillet, brown the ground turkey over medium heat, breaking it into small pieces, about 8-10 minutes
  3. Add carrots, green beans, and peas to the skillet and cook for 5 minutes until slightly tender
  4. Stir in cooked rice, pumpkin puree, and spinach, cooking for 2 more minutes until spinach wilts
  5. Remove from heat and let cool to room temperature
  6. Mix in olive oil and fish oil thoroughly
  7. Grind cleaned eggshells into a fine powder using a coffee grinder or mortar and pestle, then stir into the mixture
  8. Portion into daily servings and refrigerate or freeze
