Ingredients
- 2 lbs ground chicken (93% lean)
- 1 cup brown rice (uncooked)
- 1 cup chopped carrots
- 1 cup chopped green beans
- 1 cup chopped spinach
- 2 tbsp ground flaxseed
- 1 tbsp olive oil
- 4 cups water
Step-by-Step Instructions
- Rinse the brown rice thoroughly and combine with 2 cups of water in a medium pot. Bring to a boil, then reduce heat and simmer for 35-40 minutes until tender and water is absorbed.
- In a large skillet, brown the ground chicken over medium-high heat, breaking into small crumbles, about 8-10 minutes until no pink remains. Drain excess fat.
- In the same pot used for rice, combine the cooked chicken, remaining 2 cups water, carrots, and green beans. Simmer on medium heat for 15 minutes until vegetables are soft.
- Stir in the cooked rice, spinach, ground flaxseed, and olive oil. Cook for an additional 5 minutes until spinach is wilted and everything is well combined.
- Remove from heat and allow to cool completely to room temperature before serving. Store in airtight containers.
