Ingredients

  • 1 lb lean ground lamb
  • 1 cup pearl barley
  • 1 medium zucchini, diced
  • 1/2 cup chopped parsley
  • 1 tbsp olive oil
  • 1/2 tsp calcium carbonate

Step-by-Step Instructions

  1. Brown ground lamb in a large pot over medium heat. Drain excess fat.
  2. Add barley and 3 cups water. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  3. Add diced zucchini and cook for 10 more minutes until barley is tender and zucchini is soft.
  4. Remove from heat. Stir in chopped parsley, olive oil, calcium carbonate, and vitamin E.
  5. Cool completely. Portion into daily servings. Refrigerate up to 5 days or freeze up to 3 months.
