Ingredients

  • 2 lbs (900g) boneless skinless chicken breast
  • 1.5 cups (300g) uncooked brown rice
  • 1 cup (150g) diced carrots
  • 1 cup (130g) chopped green beans
  • 1/2 cup (75g) peas
  • 2 tbsp (30ml) olive oil
  • 4 cups (960ml) water

Step-by-Step Instructions

  1. Rinse the brown rice thoroughly under cold water and drain.
  2. Place the rice and 4 cups of water in a large pot, bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes until tender.
  3. While the rice cooks, dice the chicken breast into 1-inch cubes.
