Ingredients
- 2 lbs boneless, skinless chicken breast
- 1.5 cups uncooked brown rice
- 1 tbsp olive oil
- 1 cup chopped carrots
- 1 cup chopped green beans
- 1 cup chopped spinach
- 4 cups water or low-sodium chicken broth
Step-by-Step Instructions
- Rinse the brown rice thoroughly under cold water.
- In a large pot, combine the rinsed rice and 4 cups of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes until tender.
