Ingredients

  • 1 cup pumpkin puree (plain, not pie filling)
  • 1/2 cup brown rice
  • 1/2 cup chopped carrots
  • 1/4 cup chopped green beans

  • 4 cups low-sodium beef broth
  • 1/2 tsp turmeric powder

Step-by-Step Instructions

  1. Cook brown rice according to package directions and set aside
  2. In a large pot, brown ground beef over medium heat until fully cooked, breaking into small pieces
  3. Drain excess fat from the beef
  4. Add carrots and green beans to the pot, cook for 5 minutes until slightly tender
  5. Pour in beef broth and pumpkin puree, stir well
  6. Add turmeric and bring to a simmer
  7. Cook on low heat for 15-20 minutes, stirring occasionally
  8. Stir in cooked rice and olive oil
  9. Remove from heat and let cool completely before serving
  10. Store in refrigerator for up to 5 days or freeze in portions for up to 3 months
