Step-by-Step Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it into small pieces. Drain excess fat.
  2. Add the beef broth, brown rice, diced sweet potato, and carrots to the pot. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 25 minutes.
  4. Stir in the green beans and pumpkin. Continue cooking for 10 more minutes until vegetables are tender.
  5. Remove from heat and stir in the olive oil.
