Ingredients
- 1 lb lean ground beef (90/10)
- 1 cup canned pumpkin puree (not pie filling)
- 1/2 cup brown rice
- 1/2 cup diced carrots
- 1/2 cup chopped green beans
- 1 tbsp olive oil
- 4 cups low-sodium beef broth
- 1/4 cup chopped fresh parsley
Step-by-Step Instructions
- Brown ground beef in a large pot over medium heat, breaking it into small pieces
- Drain excess fat and set beef aside
- Add olive oil to the pot and sauté carrots and green beans for 5 minutes
- Return beef to pot and add broth, rice, and pumpkin puree
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until rice is tender
