Ingredients

- 1 cup canned pure pumpkin (not pumpkin pie filling)
- 1/2 cup brown rice, uncooked
- 1 medium sweet potato, peeled and diced
- 1/2 cup green beans, chopped
- 1 tablespoon olive oil

- 1 teaspoon dried parsley
Step-by-Step Instructions
- In a large pot, brown the ground beef over medium heat, breaking it into small crumbles. Drain and discard excess fat.
- Add the olive oil, sweet potato, and green beans to the pot. Sauté for 3-4 minutes until slightly softened.
- Pour in the beef broth and bring to a boil. Add the brown rice, then reduce heat to low.
