Ingredients

  • 1 lb (450g) ground pork (85% lean)
  • 2 cups (300g) butternut squash, peeled and cubed
  • 1 cup (150g) spinach, chopped
  • 1/2 cup (75g) brown rice, uncooked
  • 1 tbsp (15ml) coconut oil

Instructions

  1. Cook brown rice according to package directions (usually 2:1 water to rice, simmer 45 minutes).
  2. While rice cooks, steam butternut squash until fork-tender (about 15 minutes). Mash lightly.
  3. In a skillet, cook ground pork over medium-high heat until browned. Drain excess fat.
  4. Add spinach to the pork and cook 1-2 minutes until wilted.
  5. Combine cooked rice, mashed squash, and pork mixture. Stir in coconut oil.
